Vegan chestnut brownies
Even though the chestnut season is slowly coming to an end, you still might be able to find these delicious nuts, or maybe you have saved some in your refrigerator as they are easy to keep fresh for over a month. If you have, here’s an idea of what you can do with them.

1 cup chestnut puree*
1/2 cup ground almonds
20 g cacao powder
75 g cacao mass
50 g coconut oil
90 g agave syrup
1 pinch Himalayan salt
1 pinch bicarbonate of soda
* you can make it by boiling chestnuts in water for 25-30 minutes, removing the skins, and blending them in a food processor with just a little bit of oat milk

Mix chestnut puree with melted cacao mass, coconut oil, and agave syrup. Add the almond meal, cacao powder, salt, and baking soda, and mix everything well. Transfer the batter into a cake mold (I used 20×20 cm) and bake at 180 °C for 45-50 minutes. Let the cake cool down (at least a bit) before cutting.
